How to Make Crepes

Smoked Salmon Crepe


Multi-Grain Crepes:

1 Cup NanaCakes Multi-Grain mix

2 Large Eggs

1 1/2 Cups Water

1 Tablespoon Olive Oil

Mix together with whisk until well blended. 

Pour about 1/3 to 1/2 cup of batter in the center of an oiled nonstick 10 or 12 inch skillet preheated to medium high heat.  Tilt the pan to spread evenly. Cook until almost dry.  Loosen edges of the crepe with a pancake turner and flip.

Crepes can be made ahead of time and refrigerated or frozen.  Cool completely on cooling rack and separate crepes with parchment or wax paper before refrigerating or freezing.

Place room temperature crepes on a plate.  Spread 3-4 tablespoons of creme fraiche or softened cream cheese down the center.  Fold the short edges of the crepe over the filling then the longer edges making an envelope.

Arrange the smoked salmon on top.  Garnish with julienned radish or cucumber strips and capers.
